Veganmofo Day #1

Hooray or the start of VEGANMOFO 2010 ( Vegan Month of Food!)! I'm quite excited but I'll definitely not over stress myself by trying to blog daily but definitely more than normal as I experiment more with different vegan dishes! To start off the food fest, I decided to try out two recipes that I have wanted to try for a long time(since i saw them when I was surfing the net in India!), Caramelized Lemongrass tofu from Veganlicious and Raw Pasta from Choosing Raw!
Oh so good dinner!


Dinner tonight was good!!! I modified the recipes a bit but everything worked out great! Love!!!! My take on the 'pasta sauce':

Tomato Papaya 'Pasta Sauce'
makes 2 cups

1/2 cup of baby tomatoes
1/2 cup of papaya
1/2 an avocado fruit
1 teaspoon of olive oil
a dash of thyme
a dash of oregano
a dash of pepper
1/4 teaspoon of sea salt
Place everything into the blender and blend for 1 minute or until everything is kinda blended up meshy.
Serve it on top of shredded zucchini, cucumber, carrot and spinach leafs and you get a nice bowl of yummy veggie 'pasta' goodness! It is raw but it tasted so refreshing and good!

See the brownish square hidden under the spinach leaf? So good tofu!

Caramelized Tofu Sandwich
Makes 3 sandwiches

The tofu

2 medium size block of tofu from the wet market( very soft and fresh!)
1/4 cup of brown sugar
1 tablespoon of soy sauce
1 table spoon of mirin
1 teaspoon of vinegar
a dash of pepper
1/4 cup of water

Shredded carrots
Olive oil spread
Spinach leafs

Dissolve the sugar in the water in a pan, stir until all the sugar has dissolve. All in the rest of the condiment and stir until it bubbles. Cut the tofu up into thin rectangles and place them in a shallow dish. Pour the sauce over the tofu. Marinate for at least 1 hour!(the longer the better, mine was around 2 hours) After the marinating, bake them 20 minutes in around 200 degree Celsius for each side.

Toast your bread, spread a thin layer of olive spread on one, place a layer of shredded carrots, layer the tofu and top off with the spinach and bread. A really healthy and yummy combi!

Hopefully the sharing of these simple recipes may inspire some of my non vegan friends to cook some healthy stuff! Seriously with so much veggie and fruits to work with, i don't see a reason to miss meat! I really don't miss them at all and I hate it when people say things like i eat grass or eww i JUST eat veggies. They just don't know how to appreciate what we have naturally that is not only good for our body and better for the environment too!

The past weekend has been a tough one for me with so many friends making not-so-nice comments about my diet and dear friends who deliberately eat things like KFC and drink Coke. I don't get why I have their well being in mind but they just seem so happy to eat things that are so harmful to their body and environment. Arg!!!! I was so confused yesterday!! But I should stop thinking about it....

My family diet has become better now! But my dad is a tough one! He still sneak out to eat meat sometimes~~
